The Email history can be viewed via the Admin > Email history menu.
Relevant details, such as the details of the recipient, the sender, and the message are displayed.

Users can filter the view by date range, recipient email, or by message.
Email click tracking
It is possible to track the action of the recipient provided that the school has selected the setting to do so.
Admin > Settings > Tick 'Enable email click tracking'.
Note that many external systems have security that block email tracking. If this is the case and emails are not being received by the recipients, then this should be unticked.
